This rich and savory cheesy bacon onion dip is the ultimate crowd-pleaser, perfect for game days or gatherings. Made in the slow cooker, it combines crispy bacon, caramelized onions, and gooey melted cheese for a warm, comforting appetizer everyone will love.
Every year for Christmas Eve, our family gets together to eat all sorts of junk food and play games. I brought this dip one year and we scraped the Crockpot clean.
It’s the perfect dip for football season, too! And because it’s in the slow cooker, it stays nice and warm for your whole party!
I hesitate to call this an actual “crockpot” dip because you have to do a lot of prep cooking ahead of time, but you DO cook it in the slow cooker and I served it straight from the crock to keep it warm.
Ingredients needed for this cheesy Bacon Onion Dip
- bacon
- large onion, chopped
- salt
- pepper
- garlic, chopped
- cream cheese, softened
- sour cream
- mozzarella cheese, shredded
- diced tomatoes and chiles (like Rotel), drained
- optional-jalapeno pepper
Instructions
Cook the bacon in a large skillet over medium heat until crispy (I chop mine up ahead of time, but you can wait until it’s cooled and chop the crispy pieces.)
Drain the bacon on a paper towel. Remove the bacon grease, leaving about 1 Tbsp in the pan for cooking the onion.
Add the onion to the pan and season with salt and pepper, cooking for 1-2 minutes
Add the garlic and continue cooking for another minute.
Mix the cream cheese and sour cream in the crock of your slow cooker.
Stir in the bacon, mozzarella, onion and garlic mixture and the diced tomatoes.
Tip!
Grate the mozzarella by hand, rather than using pre-shredded cheese. It will melt more evenly and have a smoother texture.
Heat on low for 2 hours or until the cheese is completely melted. A small 2 quart slow cooker is perfect for this recipe. Serve warm with chips or crackers.

Bacon Onion Dip
Ingredients
- 1 pound bacon
- 1 large onion chopped
- 1 jalapeño (optional) seeds and ribs removed, chopped
- 1 tsp salt
- 1 tsp pepper
- 3-4 cloves garlic diced
- 8 oz. cream cheese softened
- 1 cup sour cream
- 2 cups mozzarella cheese shredded (don’t use pre-shredded cheese-grate off the block)
- 10 oz. can of diced tomatoes and chiles like Rotel, drained
Instructions
- 1 pound baconCook bacon in a large skillet over medium heat until crispy OR bake on a sheet pan in the oven
- Drain on a paper towel and chop into small pieces if you haven’t already
- Remove the bacon grease, leaving about 1 tbsp in the pan for cooking the onion
- 1 large onion, 1 jalapeño (optional), 1 tsp salt, 1 tsp pepperAdd the onion to the pan and season with salt and pepper, cooking for 1-2 minutes. If you want extra spice, add the chopped jalapeno as well
- 3-4 cloves garlicAdd the garlic continue cooking for another minute
- 8 oz. cream cheese, 1 cup sour creamMix the cream cheese and sour cream in the crock of your slow cooker
- 2 cups mozzarella cheese, 10 oz. can of diced tomatoes and chilesStir in the bacon, onion (jalapeno) and garlic mixture, mozzarella and the diced tomatoes
- Heat on low for 2 hours or until the cheese is completely melted.
- Serve with chips or crackers
Notes
- For best results and a smooth dip, shred your own cheese off the block (not pre-shredded)
- Add some chipotle powder for a smoky heat
- Eliminate the jalapeno pepper if you don’t want any spice

Fresh grated mozzarella — do you mean like a ball of fresh mozzarella? Isn’t that too squishy to be able to grate? Or can you buy it in a block?

You can buy it in a block. Well, it’s kind of a blob 🙂 but it’s easy enough to shred. It’s soft, but will still work on the grater. You can throw it in the freezer to make it easier to grate.
The pre shredded stuff has the anti-caking agents the make it harder to melt and stay smooth.
