bacon

large onion
chopped

jalapeño (optional)
seeds and ribs removed, chopped

cream cheese
softened

sour cream

cups
mozzarella cheese
shredded (don’t use pre-shredded cheese-grate off the block)

oz.
can of diced tomatoes and chiles
like Rotel, drained
Instructions
Cook bacon in a large skillet over medium heat until crispy OR bake on a sheet pan in the oven
1 pound bacon
Drain on a paper towel and chop into small pieces if you haven’t already
Remove the bacon grease, leaving about 1 tbsp in the pan for cooking the onion
Add the onion to the pan and season with salt and pepper, cooking for 1-2 minutes. If you want extra spice, add the chopped jalapeno as well

1 tsp pepper
Add the garlic continue cooking for another minute
3-4 cloves garlic
Mix the cream cheese and sour cream in the crock of your slow cooker
8 oz. cream cheese,
1 cup sour cream
Stir in the bacon, onion (jalapeno) and garlic mixture, mozzarella and the diced tomatoes
2 cups mozzarella cheese,
10 oz. can of diced tomatoes and chiles
Heat on low for 2 hours or until the cheese is completely melted.
Serve with chips or crackers
Notes
For best results and a smooth dip, shred your own cheese off the block (not pre-shredded)
Add some chipotle powder for a smoky heat
Eliminate the jalapeno pepper if you don't want any spice
