Get ready to cozy up with a big bowl of Lasagna Soup in the Crockpot—it’s like your favorite Italian comfort food, but even easier to make!
Crockpot Lasagna Soup starts with a tomato base, yummy seasonings, uncooked ground beef or turkey, and a surprise ingredient that makes sense when you think about it. 🙂
After it simmers all day in the slow cooker, you add the uncooked noodles, and cheese, let it all simmer together, and sit down to a deliciously comforting meal.
Ingredients needed for making Lasagna Soup in the slow cooker:
- lean ground beef or turkey (I prefer ground turkey because it’s less greasy than ground beef and I don’t have to brown it first!)
- beef broth-low sodium if you’re watching your salt intake
- garlic-measure with your heart <3
- onion-diced small
- Italian dressing mix-the dry packet often found on the aisle with salad dressing (again, low sodium option if you’re concerned about salt intake)
- canned diced tomatoes-if you prefer smaller pieces, get the “petite” diced tomatoes
- V8 vegetable juice-it’s full of flavor and adds lots of great vitamins and minerals, too!
- uncooked pasta-I like curly pastas like cavatappi, rotini or macaroni
- water-add this at the end with the pasta
- salt and pepper to taste
- mozzarella cheese, Parmesan or other cheeses for topping
Instructions for making Lasagna Soup in the Crockpot
First, add the tomato paste and diced tomatoes to the slow cooker and mix together. Next, add broth, beef or turkey, garlic, seasoning, onion, V8 and salt and pepper.
Cook on Low for 4-5 hours or longer if you want to increase the intensity of the flavors. 30 minutes before you are ready to serve, add the uncooked pasta and water.
Cook for 30 minutes more and check to be sure the pasta is done. Top with mozzarella and/or Parmesan cheese when serving.
I’ve made this lasagna soup several times and it doesn’t look all that pretty. But the recipe is so easy and tastes so great, I had to share it with you anyway! 🙂
What to Serve with Lasagna Soup
A soup like this is just begging to be served with Toaster Oven Garlic Bread, homemade Garlic Knots or even these delicious Copycat Cheddar Bay Biscuits.
It’s probably a good idea to add some fresh vegetables, too. I like to have a salad for something crispy and light and then some roasted asparagus or broccoli and cauliflower made in my Crockpot Express.

Ingredients
- 1 28 oz can diced tomatoes
- 1 6 oz can tomato paste
- 1 lb lean ground beef or turkey, uncooked
- 3 cups beef broth
- 1 12 oz can V8 vegetable juice
- 1/2 cup onion diced
- 2 cloves garlic diced
- 1 .7 oz pkt Italian dressing mix
- 2 cups uncooked pasta cavatappi, rigatoni or macaroni
- 1 cup water
- salt and pepper to taste
- mozzarella and/or Parmesan cheese for topping
Instructions
- 1 28 oz can diced tomatoes, 1 6 oz can tomato pasteIn the slow cooker, mix together the diced tomatoes and tomato paste
- 1 lb lean ground beef or turkey, uncooked, 3 cups beef broth, 1 12 oz can V8 vegetable juice, 1/2 cup onion, 2 cloves garlic, 1 .7 oz pkt Italian dressing mix, salt and pepperAdd beef or turkey, broth, V8 juice, garlic, onion, and seasonings.
- Cook on low for 4-5 hours (you can simmer longer-it will just increase the intensity of the flavors)
- 2 cups uncooked pasta, 1 cup water30 minutes before you are ready to serve, add the uncooked pasta and water.
- mozzarella and/or Parmesan cheeseSprinkle cheese on top before serving. Yum!

I use my slow cooker at least once a week, but I have never tried cooking pasta in it! Definitely want to try this. How was the final texture of the pasta? Not mushy?

Just make sure you don’t add it until the last 20-30 minutes and you’ll be fine! My photo is actually from the second day so the pasta had soaked up all the “juice” leftover in the soup and was a bit larger than it had been the night before. It was still awesome, though. I ate leftovers for three days 🙂
