Start with canned diced tomatoes to make this Easy Pico de Gallo. It’s the perfect addition to any Mexican dish.
Mexican food has always been my favorite kind of cuisine, but I never really liked spicy foods. However, the last few years I’ve developed a taste for jalapenos and other peppers in moderation.
I don’t want my lips and tongue to go numb, but I don’t mind if they tingle a bit. My favorite kind of “salsa” is a simple pico de gallo, sometimes called salsa fresca.
Last night for dinner I made delicious carne asada street tacos and topped them with this quick and easy pico de gallo.
Ingredients
- tomatoes-normally I dice up a Roma tomato or whatever is available, but to make this simple salsa even easier, try using a can of diced tomatoes!
- onion-a white onion is the most common onion for pico de gallo.
- jalapeño-remove the seeds and ribs if you don’t want your salsa fresca to be too spicy!
- cilantro-you can live without it, but it’s not really a true pico de gallo without cilantro, I think!
There are lots of different varieties of diced tomatoes available now. It’s an easy way to add even more flavor-try the diced tomatoes with spicy red peppers for a little heat.
The beauty of this recipe is its simplicity. Tortilla, meat, salsa. The end. It’s easy to polish off half a dozen of these babies.
My husband insisted on putting cheese all over his, but I’m a purist. (OK, I had one with cheese and it was pretty amazing, so you might want to try it that way, too.) 🙂
My carne asada recipe requires just a few spices, a cheap cut of beef and a hot grill. You can also check out my grilled pineapple salsa while you’re there. It’s pretty awesome. 🙂 But don’t get distracted-you’re here for the easy pico de gallo recipe, remember?

Easy Pico de Gallo
Ingredients
- 1 14 oz can diced tomatoes drained
- 1 jalapeno ribs and seeds removed, diced
- 1 medium white onion diced
- 1 cup cilantro roughly chopped
Instructions
- 1 14 oz can diced tomatoes, 1 jalapeno, 1 medium white onion, 1 cup cilantroDrain the tomatoes, then toss with the diced jalapeno, onion and cilantro. Store leftovers in an airtight container.
