Is it just me, or does anyone else feel like we are barreling through the days and headed rapidly into the holiday season? Adding a busy baseball schedule to our fall hasn’t helped anything. 🙂 We are loving the experience, but I feel like family dinners around the table are few and far between lately! When we do finally have a chance to sit down together as a family, it needs to be delicious and packed with favorite flavors-like this Cheesy Italian Meatloaf.
I think meatloaf gets a bad rap. It’s an inexpensive meal made up of things you usually have in the pantry. A traditional meatloaf served with mashed potatoes and vegetables is comfort food at its best. However, I know my boys, and they tend to turn up their noses at anything that isn’t hot dogs or macaroni and cheese. So I decided to make a cheesy Italian meatloaf instead. It’s made with Ragú®pasta sauce inside and on top. If I can say, “It tastes like spaghetti!” then I know they won’t fight me about it. The mozzarella and ricotta cheese in this gives it a velvety texture and keeps the meat moist, even when you reheat it. (By the way, a slab of this between two pieces of garlic bread…that wins the prize for BEST LEFTOVERS EVER.)
Cheesy Italian Meatloaf
Ingredients
- 1/2 pound ground beef
- 1/2 pound ground turkey
- 1/2 cup Ragú® pasta sauce plus more for topping
- 1 egg
- 2 oz. mozzarella cheese cut into small cubes
- 1/3 cup ricotta cheese
- 1 cup seasoned bread crumbs
Instructions
- Preheat oven to 350
- Mix all the ingredients in a bowl with your hands, working the ingredients together
- Place the mixture in a loaf pan and bake for 55-65 minutes. Check internal temperature with a meat thermometer to be sure it's cooked through.
- Top with extra Ragú® sauce and Parmesan cheese.
I bought my supplies for this recipe at Ralph’s. See that loaf of fresh bread? Yeah, we didn’t get to eat that. It would have been the perfect thing to round out our meal. There’s nothing like freshly baked garlic bread. HOWEVER, a certain dog that shall remain nameless Lulabelle decided she needed to eat the entire thing while were at Henry’s baseball game. Maybe she felt that she needed something to go with the stick of butter she’d already inhaled.

While it was annoying that we didn’t get to eat our bread, it was an entertaining thing to talk about. 🙂 Sitting down around a meal and talking is part of the magic of mealtime. You don’t have to be a professional chef to pull it off, either!
