S’more Cookie Bars are everything you love about the classic campfire treat, baked into an easy, gooey dessert. No fire needed—just layers of graham cracker, chocolate, and marshmallow goodness in every bite.

This recipe begins with a packaged cookie mix, making it just about the easiest recipe ever to prep. It’s one of those “dump and bake” kind of recipes that comes in so handy this time of year!
After you bake the cookie base, just add chocolate and mini marshmallows and you’re good to go!
Ingredients needed for S’more Cookie Bars
- sugar cookie mix-just the dry mixture, not the ingredients called for on the back
- graham cracker crumbs-use a food processor to make quick work of breaking down the crackers
- melted butter
- semi-sweet chocolate chips
- mini marshmallows
Instructions
In a medium sized bowl, mix together the sugar mix and graham cracker crumbs. Make sure there are no large chunks of crackers. A food processor is the best way to get the crumb you need.
Next, add the melted butter to the mixtures and stir until it’s well combined.
Place the cookie dough into a 9×13 baking pan and press it down evenly to create the bottom cookie layer.
Sprinkle the chocolate chips over the baked (and still warm) cookie layer. Wait about 3 minutes for the chocolate to soften and then spread evenly.
Add the mini marshmallows to the top of the chocolate layer and then place under a broiler (keep a close eye on it!) to get that golden brown toasty goodness.
Be sure to let them sit for a few minutes before slicing and eating so you don’t end up with a gooey mess all over your hands. Heat up the blade of your knife with hot water to help slice through cleanly.
These cookie bars still taste great the next day-just be sure to store them at room temperature covered tightly.

Ingredients
- 1 17.5 oz bag sugar cookie mix
- 1 cup graham cracker crumbs
- 1 cup melted butter
- 3 cups semi-sweet chocolate chips
- 4 cups mini marshmallows
Instructions
- 1 17.5 oz bag sugar cookie mix, 1 cup graham cracker crumbsPreheat oven to 375°. In a medium sized bowl, mix sugar cookie mix and graham cracker crumbs until combined.
- 1 cup melted butterPour melted butter over dry mixture. Do NOT follow the instructions on the bag to add any other ingredients.
- Evenly press into an ungreased 13×9 inch pan. Bake for 18-20 minutes, until golden brown.
- 3 cups semi-sweet chocolate chipsSprinkle the chocolate chips on top and wait about 3 minutes for them to melt. Spread evenly over the crust.
- 4 cups mini marshmallowsTop with marshmallows and broil for 30 seconds or until golden brown. Watch closely so they don't burn!
- Allow to cool for a few minutes and then cut and serve, using a hot knife to make clean cuts.
