The classic banana split flavors of strawberry, banana and pineapple take center stage in this easy no bake dessert. Banana Split Icebox Cake is perfect for summer BBQ’s and picnics!
Do I really need to say anything to convince you to try this Banana Split Icebox Cake? I mean, just look at those layers of fluffy, sweet goodness. HOW can you resist? Treat yourself before summer is over!
I made this for Charlie’s 2nd birthday. For dessert I wanted something he would like, since he’s not a huge fan of regular cake-he just wants the frosting. I pinned this Banana Split Icebox Cake from The Girl Who Ate Everything and I knew it would be perfect. It was light and refreshing, not overly sweet, and full of flavors that Charlie loves. Everyone raved about it-I didn’t even have any leftovers to eat. Bummer.
Putting this icebox cake together is really simple. Line a pan with graham crackers, top with pudding mixture and then a layer of bananas. Then repeat! Before serving, top with fresh strawberries and drizzle with your favorite chocolate (or strawberry or caramel) syrup.
Banana Split Icebox Cake
Ingredients
- 1 carton (16 oz) whipped topping, thawed
- 1 cup (8 oz) sour cream
- 1 package (3.4 oz) instant vanilla pudding mix
- 1 can (8 oz) crushed pineapple, drained
- Whole graham crackers (almost a whole box)
- 2-3 medium bananas , sliced thin
- Toppings: sliced bananas , sliced fresh strawberries, whipped cream and chocolate syrup
Instructions
- In a large bowl, mix the whipped topping, sour cream, and pudding mix until blended. Fold in pineapple.
- Line the bottom of a 9x13 baking dish (or a large platter) with graham crackers.
- Spread 1/3 of the pudding mixture over the crackers and top with banana slices. Repeat layers, ending with the pudding mixture. Cover and refrigerate for at least 8 hours or overnight, which is best. Graham crackers should be soft.
- Before serving, top with additional bananas and strawberries and drizzle with chocolate syrup.

The best thing about an icebox cake is how soft it gets in the fridge overnight! You can cut right through it with a fork and all those creamy layers blend together into an amazing bite. YUM.

This is a great recipe, I’ve been making for a few years and get quite a few request for it. My only difference is I double the pineapple only because love pineapple and I add walnut topping and cherries to the top.What’s a banana split without nuts and cherries. Thank you

Thank you! I agree- it’s a classic. ๐ We are a nut-hating family so I skipped them. Normally I’d say add peanuts for that “old-fashioned” banana split flavor. Do you use cherries in addition to strawberries?

Yes ,I add the cherries to the very top after the chocolate syrup and the walnut with syrup topping, I keep everything else exactly as you with the increase in pineapple
