These chocolate filled cookies are big, soft, and chewy with gooey chunks of chocolate hidden inside. They’re the kind of oversized treat that’s perfect for serious chocolate lovers.
Chocolate chip cookies are my absolute #1 favorite dessert of all time. You just can’t beat a warm, gooey cookie when it comes to a sweet treat.
I’m always trying out new cookie recipes, and these chocolate FILLED cookies definitely made it into the rotation. It doesn’t hurt that they are the size of your hand. 🙂
Ingredients needed for Chocolate Filled Cookies
- butter-softened to room temperature
- brown sugar
- granulated white sugar
- vanilla extract-I love Mexican vanilla, but any kind is fine
- egg
- flour
- baking soda
- salt
- vanilla pudding mix-make your own pudding mix or buy a box of instant pudding mix
- semi-sweet chocolate chips
- semi-sweet or dark baking chocolate, chopped (set aside several large chunks for the center of each cookie)
This recipe is the same as my Jumbo Chocolate Chip Cookies and Caramel Stuffed Cookies, with the addition of the melty chocolate center.
Instructions
In a mixing bowl, cream together the butter and sugars until light and fluffy.
Add the egg and vanilla to the creamed mixture. Mix until well combined.
In a separate bowl, mix together the dry ingredients with a whisk or fork.
Add the dry ingredients to the wet and mix until combined.
Add the chocolate chips and chopped chocolate and mix just until combined. Leave several large chunks of baking chocolate set aside for the next step.
Measure out 1/4 cup of cookie dough and shape into a ball. Gently press down on the center to make a well for the chocolate chunks.
Add several chunks to the center of each cookie dough ball.
Measure out another 1/4 cup of cookie dough and covered the chocolate with it. Roll the whole thing (1/2 cup dough total) into a ball. Do not flatten it.
Place 3 cookies on a baking sheet and leave enough space between them to spread. Bake for 14-16 minutes. Allow to cool for at least 5 minutes before removing from the pan.
Chocolate Filled Cookies
Ingredients
- 1 cup butter softened to room temperature
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 1 tsp vanilla extract
- 1 egg
- 2 1/4 cups flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/4 cup vanilla pudding mix for baking or use one box (3.4 oz) instant pudding mix
- 1 1/2 cups semi-sweet chocolate chips
- 4 oz baking chocolate squares chopped, divided
Instructions
- Preheat oven to 350. Line two cookie sheets with parchment paper or use silicone baking mats.
- 1 cup butter, 3/4 cup brown sugar, 1/4 cup white sugarIn a large bowl, cream together butter and sugars until fluffy and combined.
- 1 tsp vanilla extract, 1 eggAdd the vanilla and the egg and mix well.
- 2 1/4 cups flour, 1 tsp baking soda, 1/2 tsp salt, 1/4 cup vanilla pudding mix for bakingIn a medium bowl, stir together the flour, soda, salt and vanilla pudding mix until evenly mixed.
- Slowly add the dry ingredients to the wet, mixing as you go. Do not over-mix.
- 1 1/2 cups semi-sweet chocolate chips, 4 oz baking chocolate squaresStir in the chocolate chips and chopped chocolate chunks (leaving several set aside for the centers.)
- Measure out 1/4 cup of dough and roll it into a ball. Gently press down on the center, creating a "well" for the chocolate.
- 4 oz baking chocolate squaresAdd several chunks of chocolate squares to the well in the cookie dough.
- Measure out another 1/4 cup of dough, and cover the chocolate with it. Roll up the whole thing (a total of 1/2 cup of dough) into a neat ball. Place it on a silicone or parchment lined cookie sheet. DO NOT FLATTEN.
- Place only 3 cookies on a sheet and space them out so there’s plenty of room for spreading. Bake at 350 for 14-16 minutes. Allow them to cool on the sheet for at least 5 minutes before moving.
