There are only three days left and if you’re anything like me, you are scurrying around buying stocking stuffers, groceries for the big dinner and wrapping last-minute gifts. When I can’t take the crowds anymore, I start baking gifts. 🙂 I don’t know about you, but I can never have too many Christmas cookies or loaves of bread! I found an easy recipe for banana bread on KRAFT’s website and it has a surprise ingredient that keeps it really moist and full of flavor, making it a perfect gift for neighbors or hostesses.
I found this recipe for Easy Banana Bread on KRAFT Recipes and I wasn’t totally sold on the idea of using MIRACLE WHIP in a dessert bread. It seems like more of a savory ingredient. But it promised to keep the bread moist and delicious, so I went with it. What do you know- it works! 🙂 Now I can bake up a few more loaves and package them up as quick gifts for my neighbors! I have some cute striped paper trays with matching tags that are perfect for this bread. Add some tissue paper and ribbon and they are ready to go! (I topped mine with a cute little ornament so there’s something left after they eat up my gift.) 🙂
Easy Banana Bread
1 egg
1/2 cup MIRACLE WHIP Dressing
1-1/3 cups mashed fully ripe bananas (about 3)
1-1/2 cups flour
1 cup sugar
1/2 cup chopped PLANTERS Walnuts
1 tsp. baking soda
1 tsp. salt
HEAT oven to 350ºF.
BEAT egg, dressing and bananas in large bowl with whisk until blended. Mix remaining ingredients. Add to banana mixture; stir just until moistened.
POUR into 9×5-inch loaf pan sprayed with cooking spray.
BAKE 1 hour or until toothpick inserted in center comes out clean. Cool in pan 10 min.; remove from pan to wire rack. Cool completely.
