Infuse your pies with the warm, caramelized, and slightly spiced notes of Biscoff cookies with this no bake Biscoff Cookie Crust!
If you’re a fan of those crunchy little speculoos-flavored cookies and want to take your pie creations to the next level, you’re in for a treat. This recipe will show you how to transform Biscoff cookies into a scrumptious no bake pie crust that’s perfect for a variety of sweet fillings.
This is the same recipe that I used in my Cookie Butter Cheesecake recipe, but a bit larger to fill a 9″ pie plate. It follows the same basic recipe for a No Bake Graham Cracker Crust as well. All you need is something yummy to put inside it!
Ingredients needed for a Biscoff Cookie Crust
- Lotus Biscoff cookies
- butter
- sugar
- optional-food processor (I understand this is technically equipment and not an ingredient) 🙂
While a food processor makes this recipe much easier and quicker to finish, it can be done without one. Simply place the cookies in a large zipped bag and smash with a kitchen mallet or rolling pin.
How to make a Biscoff Cookie Pie Crust
Start by pulsing the cookies in a food processor until finely crumbled as shown below. Or use a bag and kitchen mallet as mentioned above.
Add the sugar and butter to the food processor.
If you aren’t using a food processor, be sure to melt the butter first and add it to the bag with the sugar. This will help it come together more easily.
Pulse until the butter is completely mixed in and all the cookie crumbs are moistened and creating a crumbly, slightly sticky mixture.
Press the cookie mixture into the bottom and up the sides of a 9″ pie plate. Use the bottom of a glass to really press down and smooth out the crust all the way around the pan.
Chill for 15 minutes to set.
What are some good no bake pie recipes to use with Biscoff Cookie Crust?
Biscoff Cheesecake-really, cheesecake of any kind is going to be delicious with a cookie crust. This crust will work with a no bake recipe or a traditional cooked cheesecake.
Eggnog Pie-this no bake pie calls for a gingerbread cookie crust, which is delicious. However, the spicy and warm flavors of a Biscoff cookie crust go just as well with the creamy eggnog filling!
No Bake Pumpkin Pie-the layers of pumpkin spice in this dessert are perfect for this crumbly cookie crust.
Strawberry Mousse Pie-I don’t want to leave out a fresh spring/summer dessert! This is another no bake pie with a creamy filling perfect for pairing with a Biscoff Cookie Pie Crust.
Biscoff Cookie Crust
Ingredients
- 1 8 oz pkg Lotus Biscoff cookies
- 3 tbsp sugar
- 3 tbsp butter
Instructions
- 1 8 oz pkg Lotus Biscoff cookiesAdd the cookies to a food processor and pulse until you get fine crumbs. You don’t actually need the entire package of cookies-about 20 total will be enough. Save the last few to snack on or enjoy with coffee!
- 3 tbsp sugar, 3 tbsp butterAdd the sugar and butter and pulse again until evenly moistened and crumbly.
- Press into a 9” pie plate on the the bottom and up the sides. Use a glass to press and create a smooth base. Chill for 15 minutes to set.
