Brownie Bottom Pudding Pie is made with a baked brownie crust, topped with creamy pudding, whipped topping and cookie pieces! Grab a glass of milk!
Every summer, our church hosts two interns from a Bible college and works them to death helps to train them for full time ministry. They work with the youth group, run fundraisers, do announcements, sing in the choir, mow the lawns, learn graphic design/printing and a host of other things.
In return for all of that training, they earn money towards their next year’s school bill and get fed a home cooked meal every night. Last week, it was our turn to host the guys, and I decided to try a twist on dessert I saw on Kraft’s website. I don’t know why exactly, but I seem to make something new and treat guests as guinea pigs on a regular basis. Nothing like living dangerously, right? Fortunately, this Brownie Bottom Pudding Pie is pretty much impossible to mess up. 🙂
Brownie Bottom Pudding Pie
Ingredients
- 1 pkg. 4 oz. semi-sweet chocolate baking bar
- 1/4 cup 1/2 stick butter
- 3/4 cup sugar
- 2 eggs
- 1 tsp. vanilla
- 1/2 cup flour
- 2-1/2 cups cold milk
- 2 pkg. 4-serving size each white chocolate instant pudding
- 1 tub 8 oz. whipped topping, thawed
- OREO cookie pieces
Instructions
- Preheat oven to 350°F. Microwave chocolate and butter in large microwavable bowl until butter is melted. Stir until chocolate is completely melted.
- Add sugar, eggs and vanilla; mix until well blended.
- Stir in flour and spread into greased 9-inch pie plate (a deep pie plate if possible)
- Bake 20-25 minutes or until toothpick inserted in center comes out with fudgy crumbs. DO NOT OVERBAKE. Cool completely on wire rack.
- Pour milk into large bowl. Add dry pudding mixes. Beat with wire whisk 2 minutes. Let stand 2 minutes. Spread over pie.
- Top with whipped topping; sprinkle with cookie pieces.
- Refrigerate until ready to serve. Store leftover pie in refrigerator.
One of my favorite things about brownies is the fact that you don’t have to drag out the mixer to make them. Just stir a few times, dump and bake! The soft, chewy “crust” is yummy enough to eat by itself. I toyed with the idea of mixing the whipped topping, pudding and cookies like I do for OREO Fluff. I can’t imagine it would be anything but WONDERFUL.
Now I just need to invite someone else over to be my guinea pigs. 😉
