Crockpot Express Broccoli Cheddar Soup checks all the boxes. It’s creamy, comforting, delicious, and easy. And thanks to the Crockpot Express, it’s on the table in under 30 minutes!
My husband firmly believes that soup is not a meal. It is one course of a meal, but it cannot stand alone as dinner. 🙂 However, he does like creamy soups, and he made an exception for this Crockpot Express Broccoli Cheddar Soup because I served it in bread bowls. I just have to say…YUM! I saved enough to enjoy for lunch the next day and snap a few pictures so I could share the recipe!
I got this recipe from someone in our Crockpot Express Community Facebook group. I reminds me a lot of Panera’s Broccoli Cheddar Soup. Unlike a typical homemade soup, I don’t have to leave it to simmer for ages on the stove. It’s done in under 30 minutes and starts with frozen broccoli, so it’s so easy to put together! If you’re on a low carb or keto diet, this is perfect for you! Just leave out the bread bowl or dinner rolls. 😉
Crockpot Express Broccoli Cheddar Soup
Ingredients
- 1 pound frozen broccoli florets
- 1/4 cup chopped onion
- 1/4 cup shredded carrots
- 3 cups water
- 3 chicken bouillon cubes
- 2 cups heavy whipping cream
- 8 ounces sharp cheddar cheese shredded
- 1 tablespoon hot sauce optional
Instructions
- Place onion, broccoli, carrots, water and bouillon cubes in inner pot.
- Place lid on CPE, lock it and turn pressure release tab to the closed "X" position. Set BEANS/CHILI mode for 15 minutes. Press START.
- When time has counted down to zero and KEEP WARM light has come on, carefully release pressure by moving pressure release valve to open position. You might want to do it gradually.
- Stir in heavy cream. Press START/STOP button to get out of KEEP WARM mode. Switch to SAUTÉ/BROWN mode let it come to a slow boil (about 5 minutes).
- Gradually stir in cheese and hot sauce, if desired. Press START button to cancel SAUTÉ/BROWN mode. Put on KEEP WARM mode, if desired.

Making this soup — seems a bit watery. could I add cornstarch to thicken it? thanks!

Yes, if you want it thicker you can do that. But dissolve the corn starch in cold water first. Equal parts will give you a nice thickening agent.

It tastes good, but the cheese, a block of cheddar I shredded myself, was clumpy I’m going to whirl it up with my stick blender and figure out something to do with it.

Did you stir in the cheese gradually after cooking, as the recipe states? It shouldn’t be clumpy unless you added it all at once in a big pile and didn’t stir it around or something. The heavy cream and cheese are added at the end, and then cooked a bit so it melts into the soup smoothly.

Thanks for responding so quickly. I had thought about it the next day, and that’s close to what happened. I was putting it in gradually, stirring it in before adding the next batch, then there was a sudden family ’emergency’. I left it cooking for about 10 mins, when I got back, a large bit of the cheese was stuck to the bottom. My mistake, I’m going to try this again.

I plan on making this for me and my dad but hes allergic to onions. Can i make it without the onions or will it affect the taste negatively?

You can just leave them out. The flavor they add will be missing, but it won’t ruin the soup.

If I double the recipe how much cooking time should I add? Or should it stay the same? Please help!

The cooking time will be the same. It will just take longer to come to pressure to begin with because the pot will be full 🙂

Did it all fit reasonably? Just made this receipe for the first time and I’d like to double it as well! I’m using the 6qt, for reference.

I have the 8qt. pot and it fit fine. I’m not sure about the 6qt. Maybe add the ingredients for one batch and then see how much room is left in your pot before adding the double amount. It did take longer to bring to pressure when doubling so the broccoli cooks down too much. You need to reduce your cooking time by about half. It has been awhile since I made this, but it was delicious!

Love this!! It is easily as good as panera’s soup. I only used one bouillon cube as I’ve had bad experiences with too much before. (I think there are different sizes and the ones I get are big.)

I just recently discovered that there are different sizes for bouillon cubes! I’ve always had the small square ones (about the size of a sugar cube or even smaller) but the last time I bought some, they were really large rectangular cubes! I will be sure to specify size in the future! 🙂 I’m glad you like the soup, though!
