Bionico (or Mexican fruit salad) is all about that creamy sauce poured over the fresh fruit. Street food doesn’t get any better than this!
A few months ago we had a family breakfast at church and a young man from the church who works as a chef at a local restaurant made breakfast for everyone. It was buffet style, and at the end of the table was a huge bowl of fresh fruit and several small milk jugs full of this sweet cream. He told us to fill a cup with fruit, add coconut if we wanted it and then pour the cream over the top. I took one bite and was hooked. It was so delicious!
I fully intended to get the recipe from Jorge as soon as breakfast was over but I forgot. I figured it would be easy to just look it up online when I was home to find the ingredients. I was very wrong. I couldn’t find ANYTHING! A few weeks later I asked him to give me the recipe. He told me I probably wouldn’t find anything online because it’s a Mexican dish called Bionico. You can find it sold in little markets and on street carts in the farmer’s markets.
After finding out the real name, I looked it up and found some recipes online. My impression is that Bionico is a little bit like the Mexican version of marinara sauce. Everyone’s mother makes the best and her secret recipe is the only one worth trying. 🙂 But since I’ve only had Jorge’s recipe and it was awesome, that’s the one I’m sharing with you!
Bionico: Mexican Fruit Salad
Ingredients
Fruit Salad
- 1 pound strawberries sliced
- 3 bananas sliced
- 3 kiwis peeled and diced
- 3 apples cored and diced
- 1/2 cup raisins or dried cranberries
- 1 pound grapes sliced lengthwise
- coconut flakes optional
- You can use any fruit that you like-melons pineapple, mango, golden raisins, etc.
Sweet cream
- 1 can 14 oz sweetened condensed milk
- 1 can 12 oz evaporated milk
- 1 pint sour cream
- 16 oz vanilla or plain yogurt
- 1/4 cup honey
Instructions
- After cutting the fruit, toss it all together in a large bowl.
- In another bowl, mix all the sweet cream ingredients with a whisk. The consistency should be thinner than yogurt but thicker than milk. If you use plain yogurt, you may want to add a little more honey for sweetness. Refrigerate until ready to serve.
- To serve, scoop fruit into a bowl, top with coconut if desired and then pour the sweet cream over the top.
Here’s another fruit salad that’s similar to Bionico because it’s served with a delicious creamy sauce!

I also made this recipe without the honey. I used vanilla yogurt (Yoplait) and it was perfect – not too sweet and can be used on anything. I went out on a limb making a huge batch without knowing how it will taste but everyone loved it. Thanks for sharing! It will be a staple in my house from now on.

Best sweet crema recipe! I’ve made this a couple of times for fresas con crema (strawberries and cream), topped with granola and whipped cream. I made this combo for my son’s birthday party, and it was a total hit! Better than what you can buy anywhere (trust me, this was hubby approved! ๐).

Thank you! I agree-it’s far better than anything we’ve had from the store. Plus, there are usually leftovers ๐

How long will this cream last in the refridgerator?
Nicole Burkholder says
The last time I made this, I kept my extra cream in an airtight container in the fridge for about a week afterwards. It’s really yummy on oatmeal, too! ๐

1 can of how many oz? Never seen a recipe without specifying an actual amount.
Nicole Burkholder says
Sorry about that! I typically only see the standard sized cans in the store, so I forget that some places do carry a small can. For evaporated milk, the standard size is 12 oz and for condensed milk, the standard is 14 oz. I’ll edit the recipe to avoid confusion for others in the future. Thanks!

This is ABSOLUTELY DELICIOUS!! It’s kind of like a thicker creamy horchata. It tastes exactly like the bionico I have been buying at this hole-in-the-wall Mexican restaurant for years! Everyone that tries it loves it, even my daughter. The only thing missing from this recipe that the restaurant has, is they top it with dry honey bunches of oats cereal. I’m telling you, it is the perfect texture and flavor to go with this delicious treat!
Elizabeth says
Oh, and it is even better if you let it sit in the refrigerator overnight.

I’m so glad you like it! The last time I made it, I used granola on top, but Honey Bunches of oats is a great idea! Sweet and crunchy ๐

This was awesome! I made the cream mixture exactly as the recipe said, only I didn’t add the honey….and it was plenty sweet as is…even my kids agreed that we didn’t need to add the honey. I also figured that when added the fresh fruit, it would add extra sweetness as well. Thank you for sharing! ๐

You’re welcome! Thanks for letting me know! It’s very easy to play with the flavors and still have a delicious treat.
