My family has already planned our Thanksgiving menu for a VERY large gathering this year. Turkey, mashed potatoes, yams, corn bread casserole, green bean casserole, dinner rolls, broccoli salad, and stuffing. My all-time favorite part of Thanksgiving dinner is stuffing. Honestly, I just love all the side dishes. I could go without eating any turkey at all! 🙂 Fortunately for me, we always have lots of leftovers, so I’m making plans to use them up in more creative ways than just another plate of Thanksgiving dinner. These cheesy stuffed mushrooms are easy to put together and serve as a pretty appetizer or even a side dish.
Since I don’t exactly have Thanksgiving dinner leftovers lying around the house just yet, I headed to Wal-Mart to pick up some stuffing and cheese for these cheesy stuffed mushrooms. Stovetop is my favorite anyway. 😉
Cheesy Stuffed Mushrooms
- 2 lbs baby bella mushrooms
- leftover stuffing (about 2 cups)
- one clove garlic, chopped
- 2 tbsp butter
- 1 cup Kraft shreds (I used triple cheddar)
- Clean the mushrooms. The easiest and best way to clean mushrooms is to wipe them down with a damp paper towel. I love mushrooms, but they aren’t exactly grown in a clean room. You don’t want to wash them because they will absorb the water and get chewy and gross when you try to cook them. Just make sure you DO clean them!
- Stem the mushrooms and set the caps aside. Chop the stems into small pieces, along with the garlic.
- Chop the garlic and mushroom stems and saute in butter until tender. Stir into stuffing, along with the cheese. Spoon the mixture into the mushroom caps.
- Bake at 400° degrees for 20 minutes, or until tender and golden brown on top. I’m pretty sure I ate half a dozen of these in the name of “taste testing” and research. 🙂
Serving Tip:
If your leftover stuffing is a bit dry, try adding a tablespoon or so of mayo to add some fat and moisture back into the mix. You can also mix in softened cream cheese for a creamier filling. If you want to add some protein, take some of your leftover turkey and chop it up into the garlic and mushroom mixture. Honestly, I don’t think there’s a single part of Thanksgiving dinner that won’t taste good stuffed into a mushroom! 🙂

I love stuffed mushrooms! My mother makes the sausage recipe each Christmas Eve. These sound fantastic as well. I can’t wait to try them. They are so delicious and elegant looking without a lot of effort. That’s how I like my recipes.
