Love the famous Crumbl Biscoff Cookies? Now you can make them at home with this easy copycat recipe that’s just as irresistible!
I’m a sucker for any kind of cookie, and when Crumbl came out with a Biscoff Cookie, I was pretty much a goner. If cookie butter is involved in a recipe, I’m on board.
Since I really can’t justify spending $5 for a single (albeit large) cookie more than once or twice, this copycat Biscoff Cookie recipe is a great alternative. 🙂
Ingredients for Biscoff Cookies
- unsalted butter-honestly, you can use salted if you need to, just slightly lower the salt in the recipe
- cookie butter-also called Speculoos, it’s usually found near the peanut butter
- brown sugar
- sugar
- egg
- vanilla
- flour
- baking powder
- baking soda
- salt
- white chocolate chips
- Lotus Biscoff cookies
Instructions
In the bowl of a stand mixer (you can also use a hand mixer), combine the softened butter, cookie butter, sugar and brown sugar. Cream until smooth.
Add in the egg and vanilla. Mix until combined.
Using a food processor, crush 3 of the Biscoff cookies into fine crumbs. Alternatively, you can put them in a zipped bag and crush them with a kitchen mallet, large spoon or rolling pin.
Add in the flour, baking soda, baking powder, salt and Biscoff crumbs. Mix until combined, scraping the sides often.
Fold in the white chocolate chips until they are evenly distributed.
Using a medium ice cream scoop, divide the cookie dough between the cookie sheets, leaving at least 2-3 inches between each one to allow for spreading.
While baking, break the remaining Biscoff cookies in half. Remove the cookies from the oven and immediately insert a half of the cookie into the center while it is still hot. Allow to cool completely on a cooling rack.

- 1 c white chocolate chipsFold in the white chocolate chips until they are evenly distributed.

- Bake in the preheated oven for 8-10 minutes or just until the edges are beginning to brown.
- 10-15 Biscoff cookiesWhile baking, break the remaining Biscoff cookies in half, set aside.
- Remove the cookies from the oven and immediately insert a half of the cookie into the center while it is still hot.
- Allow to cool completely.
