Kick off your morning with a hearty carne asada breakfast burrito! Juicy marinated beef, scrambled eggs, cheese and fresh salsa all tucked into a warm tortilla—it’s breakfast done right.
If you need to fuel up for a busy morning, you can’t do much better than a breakfast burrito. They are packed with protein (from both the eggs and steak) and wrapped in carbs for extra energy.
Use leftover carne asada from dinner, or grill it fresh in the morning. This cut of steak just takes minutes to cook, so it’s not a long and complicated meal before heading out the door for the day.

Ingredients needed for Carne Asada Breakfast Burritos
- skirt steak or flank steak
- steak seasoning (I like McCormick’s) or make your own mix using cracked pepper, salt, garlic powder, onion powder and tenderizer
- water
- apple cider vinegar
- garlic
- Worcestershire sauce
- eggs
- tortillas
- shredded cheese
- salsa (for topping)
Instructions
Start by preparing a quick marinade for the meat. Since this cut of beef is rather lean and tough, you definitely need to tenderize it with an acidic marinade. It also adds tons of flavor to the meat!
Mix the marinade ingredients in a small bowl (or directly into the bottom of a zip-loc bag) and then add the meat. Seal it up and let it sit in the refrigerator for 15 minutes.
Grill the meat for 5 minutes, turning once. It is a thin cut of steak and will cook very quickly. Place the finished carne asada on a pan and let it rest while you prepare the rest of the breakfast burrito ingredients.
Cook your scrambled eggs while the meat rests. When the eggs are ready, cut the steak into strips and build your Carne Asada Breakfast Burritos.
I like to keep mine simple with just salsa and a little cheese on top, but you can add cilantro, crema or even fried potatoes. Serve with homemade Bionico (Mexican fruit salad) for a flavorful, well-rounded breakfast!
How to freeze breakfast burritos for later:
Breakfast burritos are perfect for a busy morning! To make these carne asada breakfast burritos for later, follow all the recipe instructions as listed. Build the burritos and then allow them to cool completely.
Wrap each one individually in plastic wrap or foil. Place the wrapped burritos in an airtight container or zip-loc bag in a single layer so they freeze evenly. Use within 3 months.
How to reheat carne asada burritos:
For best results, pull the burrito out of the freezer the night before and allow it to thaw in the fridge overnight. (But honestly, I know that’s probably not going to happen, so I’ll give you other options, too.) Wrap tightly in a paper towel and then microwave until warmed through (about 90 seconds.)
For “second-best results” because who can remember to thaw things: Wrap the frozen burrito in a paper towel and heat on 50% power for 1-2 minutes to thaw. Then microwave for 1-2 minutes or until heated through.
For “look lady, I don’t know where all those buttons are and I’ll never do anything but hit 1:00 and “Start” on my microwave” results: just wrap it up and hope for the best. 🙂 Start with 2 minutes and then turn the burrito over and cook for another 1-2 minutes.
You may end up with slightly chewy tortillas or unevenly heated spots here and there, but I get it. It’s fine. Life is busy and at least you’re eating something good for breakfast.
Carne Asada Breakfast Burritos
Ingredients
For the meat:
- 1-2 pounds skirt steak or flank steak
- 2 Tbsp steak seasoning or mix cracked pepper, salt, garlic powder, onion powder and tenderizer
- 1/4 cup water
- 2 Tbsp apple cider vinegar
- 1 Tbsp Worcestershire sauce
- 2 cloves garlic peeled and mashed open just a bit
Other burrito ingredients
- 6 eggs
- 6 flour tortillas soft taco sized
- 1/2 cup shredded cheese
- salsa optional
Instructions
- 1-2 pounds skirt steak or flank steak, 2 Tbsp steak seasoning, 1/4 cup water, 2 Tbsp apple cider vinegar, 1 Tbsp Worcestershire sauce, 2 cloves garlicMix all the marinade ingredients in a bowl and pour into a zipper baggie. Add the steak and let sit in a refrigerator for at least 15 minutes.
- Grill over medium-high heat for 5 minutes, turning once. Place the finished carne asada on a pan and let it rest while you prepare the rest of the breakfast burrito ingredients.
