I am not a “breakfast” person. I much prefer sleeping to waking up early and preparing a big breakfast like my husband was accustomed to growing up. As you may have guessed, my husband loves a good, hearty breakfast. Thanks to his time spent working in a diner, he has developed a talent for making delicious breakfast burritos. I enjoy them, but since I’m not a huge fan of eggs, my burrito gets a little thin unless I fill it with something else. Now, I love a good crispy hash brown and that is my go-to ingredient for filling out my burritos. For a change of pace this time, we used the Simply Potatoes southwest style hash browns. They added a little spice and huge flavor.
To make your own breakfast burrito just assemble your favorite ingredients and select your preferred style of Simply Potatoes, and enjoy. Simply Potatoes are just that-made with real ingredients. You can find them in the dairy section of the grocery store, as they are fresh and never frozen. I love how quick it makes meal preparation-the peeling and chopping is already done! They even have mashed potatoes (although I don’t recommend that for a breakfast burrito.) 😉

Southwest Breakfast Burritos
Ingredients
- 4 Burrito size Tortillas
- 6 eggs
- ½ cup of grated cheese
- 8 strips of bacon
- 4 sausage links
- 1 bag of Simply Potato Southwest Style Hash Browns
Instructions
- Thoroughly cook bacon and sausage links and chop into small bits.
- Prepare Simply Potato Southwest Style Hash Browns according to instructions on the package. Crack eggs into a bowl and whip with a fork until yolk and white are well mixed.
- Mix in bacon, sausage and cheese.
- Cook in a pan on medium heat until eggs reach the desired consistency (I add a little milk to make them fluffier).
- Place a sufficient amount of eggs onto a tortilla.
- Add in salsa or sour cream if you prefer. Fold the burrito.
Here’s a quick video of my husband properly folding a burrito (I always seem to have an end sticking out). You’ll notice he leaves some overlap before he tucks it under. This allows the burrito to use its own weight to keep it folded.
These burritos are great for breakfast or brunch, but to be honest, we always have them for dinner. Eating breakfast once a week for dinner is a great way to keep grocery costs down and it’s an easy night to add when you’re planning meals. I love potatoes just about any way they show up on my plate. Baked, fried, boiled, sautéed. A big bowl of hash browns with cheese and onions is always a great comfort food in my mind. Yum.
