Looking for a quick, easy and kid-friendly dinner? These little babies were a hit in our house and using flaky canned biscuits, you can get them put together, baked and on the table in less than 30 minutes.
Mini Sausage & Cheese Calzones, adapted from Hugs&Cookies
Ingredients:
1 Package Pillsbury Grands Biscuits (flaky layers)
Pizza Sauce (I used Ragu)
1/2 pound Italian Sausage
1/2 onion, chopped
1 carrot, peeled and chopped Mozzarella cheese, shredded
Directions:
Cook sausage, onion and carrot together until browned. Take one biscuit and pull apart the layers, doing your best to split it evenly. Press the dough down with the palm of your hand to make it larger and even in thickness.
(I tried this two ways-one whole biscuit on the bottom, filling, then topped with another biscuit OR using one biscuit split in half for the top and bottom. The split biscuits had a better filling to sauce ratio, plus it gives you 8 calzones instead of only 4.)
Top with a spoonful of sauce and sausage mixture. Sprinkle with cheese.
Cover with the other half of the biscuit dough. Crimp the edges together completely.
Place on foil-lined cookie sheet and bake at 350° for 14-16 minutes.
