One of the easiest ways to make a holiday more special for my kids is with food. Americans celebrate with food-there’s no getting around that fact! It’s the centerpiece of every major holiday, and it’s the center of our homes. We sit around a table with family and connect over food. I think that’s why I enjoy creating special meals so much. My hope is that my boys will look back on their childhood and remember the time we had Reindeer Pancakes for Christmas, or special heart-shaped pancakes and citrus whipped cream on Valentine’s Day.
Just look at all those beautiful colors! I am not a huge fan of breakfast foods, especially heavy ones, so my kids are stuck with what I think tastes good. That’s pancakes (or waffles) with lots of whipped cream, and fresh fruit. For this little breakfast platter, I made pancakes and cut out heart shapes with a cookie cutter, sliced up some fresh oranges and piled on the blueberries and blackberries. I love fresh fruit and whipped cream on my pancakes! You can pile up your favorites on a plate and munch with a fork, or grab the food and dip it directly into this citrus whipped cream.
The secret to this flavorful whipped cream is the Tampico Citrus Punch that I let the kids drink with their breakfast. It is already sweet, so you don’t need to add any sugar at all to the fresh whipping cream. The citrus flavor makes the whipped cream taste bright and goes really well with fresh fruit and pancakes.
Citrus Whipped Cream
Ingredients
- 1 cup heavy whipping cream
- 1/4 cup Tampico Citrus Punch
Instructions
- In a chilled stand mixer bowl, mix the whipping cream and punch on high until stiff peaks begin to form (about 5 minutes.)
- Garnish with fresh orange zest and serve with fruit or pancakes
