Wash the strawberries and remove the tops. Using a small paring knife, hollow out the center of each berry to make room for the chocolate filling.
1 quart fresh strawberries
In 20-30 second bursts, microwave the chocolate chips and heavy cream and stir thoroughly to combine. Once the chocolate is mostly melted, just keep stirring until it's smooth.
1 cup dark chocolate chips, 1 Tbsp heavy cream
Stand up the hollowed out strawberries in an egg carton and fill each one with the melted chocolate. Place the filled strawberries in the refrigerator (still in the egg carton) to let the chocolate filling set (can take up to an hour depending on how large the strawberries are and how much chocolate filling was used.)If desired, transfer the chocolate stuffed strawberries to a plate for serving.

If you want to add a little something extra, try dipping the tops in graham cracker crumbs or sprinkles before the chocolate sets completely.
