Add the cookies to a food processor and pulse until you get fine crumbs. You don’t actually need the entire package of cookies-about 20 total will be enough. Save the last few to snack on or enjoy with coffee!
1 8 oz pkg Lotus Biscoff cookies
Add the sugar and butter and pulse again until evenly moistened and crumbly.
3 tbsp sugar, 3 tbsp butter
Press into a 9” pie plate on the the bottom and up the sides. Use a glass to press and create a smooth base. Chill for 15 minutes to set.
Notes
This is a no bake pie crust. Simply chill and then fill with delicious pudding pies or cheesecakes.While a food processor makes this recipe much easier and quicker to finish, it can be done without one. Simply place the cookies in a large zipped bag and smash with a kitchen mallet or rolling pin. Add the sugar and melted butter (it’s easier to mix together if it’s melted) to the bag to combine until moistened and crumbly. Then press into the pie plate and chill as directed above.
