Lightly grease or spray a 9x5 inch loaf pan and set aside
Combine flour, baking soda, and salt, and set aside
1 ½ cups all purpose flour, 1 teaspoon baking soda, ½ teaspoon salt
In a larger mixing bowl, beat butter and sugar together until light and fluffy
½ cup butter, ¾ cup white sugar
Add eggs and vanillas, and beat until well combined
2 eggs, 1 teaspoon vanilla extract
Add peeled bananas, and beat until bananas are mostly incorporated. Note: if you aren’t using a stand mixer, or electric hand mixer, you may want to mash bananas with a fork or potato masher before adding to egg mixture.
3 ripe bananas
Add flour mixture to egg and banana mixture, and stir until combined
Separate ⅓ of batter, and add ground cinnamon, mixing well
¼ cup ground cinnamon
Add both batters one spoonful at a time, alternating between cinnamon batter, and regular batter until all your batter is used
Swirl batter together with a butter knife
Bake in center of oven for one hour, or until a toothpick comes out clean
Remove from oven, and let cool in pan for 8 minutes
Use a butter knife to loosen bread from pan, and turn onto a wire rack to cool
