These delicious chocolate whoopie pies are perfect for any holiday. Choose sprinkles to make an easy fall dessert, Christmas treat or enjoy any time of the year!

½cupblack and orange sprinkles(or other desired colors)
Instructions
Preheat oven to 375 degrees. Line a baking sheet with parchment paper and set aside
In a mixing bowl, whisk together flour, cocoa, baking soda, baking powder, and salt. Set aside
2 cups all-purpose flour, ½ cup unsweetened cocoa powder, ½ tsp baking powder, 1 ½ tsp baking soda, ½ tsp salt
In a larger bowl, beat butter and sugar together until light and fluffy (about 3 minutes)
½ cup butter, 1 cup granulated sugar
Beat in egg and vanilla until combined
1 large egg, 1 tsp vanilla extract
Beat in milk until combined
1 cup milk
Fold the dry ingredients into the wet ingredients until just combined
Drop 1-2 tbsp worth of batter onto the prepared baking sheet. Leaving at least 2 inches between each mound of batter (these will spread a bit)
Bake in center of oven for 8-10 minutes, or until the tops begin to firm up.
Remove from oven and transfer to a wire rack to cool completely.
Using a piping bag or icing knife, spread buttercream onto the bottom of one cookie then gently press a second cookie on top to make a sandwich. You will want to make sure to spread icing all the way to the edge so your sprinkles will have something to stick to. I even sometimes add more icing to the edges after assembling cookies.
