1 1/2cupsfresh strawberrieswashed, trimmed and halved
8 cupsspinachwashed
1/4cuppecan piecesraw or toasted
Honey Dijon Mustard Dressing
2Tbsphoney
2tspDijon mustard
1.5Tbspvegetable oil
1.5Tbsporange juice
1Tbspapple cider vinegar
1tsppoppy seedoptional
Instructions
In a large mixing bowl add washed spinach.
Rinse and half or quarter the strawberries and place in the bowl.
In a separate medium sized bowl add all of the dressing ingredients and mix well.
Pour the honey mustard dressing onto the spinach and strawberry mixture.
Lightly toss the salad until covered with dressing.
Sprinkle raw or toasted pecan pieces on top as a garnish. If you wish to lightly toast them then place in the microwave for 1 minute intervals until sizzling and golden. Let cool, and add to the salad.
Notes
Keep in a sealed container in a refrigerator for up to 3 days.Try other sweet toppings like blueberries or mandarin oranges.Add feta cheese for a tangy finish.
