2slicesof baconcooked and chopped (or use bacon bits)
4eggs
1/2cheddar cheesegrated finely
Instructions
Preheat oven to 400 and grease the sides and bottom of a muffin tin (6 muffin cups)
Place a layer of potato mix on the bottom of each cup. Don't add too much or they won't cook properly.
Bake the potatoes at 400 for 10 minutes.
While the potatoes are baking, cook, drain and chop the bacon. In a bowl, whisk the eggs and set aside.
Pull the potatoes out of the oven and reduce the heat to 350. Sprinkle the potatoes with bacon, and pour enough egg in each cup to cover the bacon and potatoes. You should have just enough to fill six cups.
Sprinkle each cup with cheese and then bake at 350 for 10 minutes or until the eggs aren't jiggly anymore.
