Skip the oven and make Crockpot Express Apple Crisp instead. The apples are perfectly cooked, creating a delicious sauce that's covered up with a buttery oat topping.
In a bowl, mix the apples, corn starch, sugar and cinnamon together until evenly coated.
Divide the apple mixture evenly between 6 ramekins.
In another bowl, mix together the crisp topping ingredients, using a fork, knife or your fingers to cut the butter into the mixture. When it's pretty evenly dispersed, you'll have a crumbly mixture.
Top each ramekin with a generous amount of crisp. Press it down a bit into the bowls to fill in the gaps and create a thick topping.
Place the trivet in the pot and add 1 cup of water. Stack the ramekins on the trivet (you can fit 3 inside the 6 quart or 4 inside the 8 quart.) Stack the second layer on top of the first, offsetting them a bit so they don't nestle together.
Close and lock the lid, turning the steam release valve to closed. Press Steam and then Start/Stop. (High for 10 minutes.)
When the cycle is done, open the steam release valve to do a quick pressure release. Carefully remove the ramekins from the pot and place them on a cooling rack to cool a bit.
Top with ice cream and serve warm. Yum!
Notes
Add a dash of nutmeg and all spice to give it a warm "apple pie" flavor!If you like your apples really soft, allow a 5 minute NPR first before removing from the pot.
