Trumpet Fanfare!!! Seriously, there should be a “sound effects” font. This may not look very pretty, but it tastes delicious, and lives up to the claim, unlike so many internet recipes out there. This soft serve ice cream is made of…FROZEN BANANAS. That’s it. Seriously. To do this right, you’re going to need a food processor. A blender just won’t cut it unless you have an industrial strength one 🙂 Just slice up some frozen bananas (just ripe ones rather than the overripe kind you save for banana bread) and toss them in the processor. Turn it on and just let it go. It will go from chunky, to grainy, to smooth and then creamy right before your eyes! You may need to stop it and use a spatula to push the banana down off the sides, but other than that, just let it do its thing. When it’s nice and creamy, toss in a couple spoonfuls of Nesquick and/or peanut butter for delicious flavor. Yum. Yum. Yummy.
Check out this post from the Not Quite Vegan for great photos of each step in the process. And then go make yourself some ice cream you won’t regret eating in the morning 🙂
2 frozen bananas, sliced
1 tablespoon Nesquick or cocoa powder
1 tablespoon creamy peanut butter
Place bananas in food processor and mix until creamy. Add in flavoring options (whatever sounds good to you!) Serve immediately for soft serve style or put in freezer to harden into more traditional “ice cream.”
