To be perfectly honest, these are getting a thumbs down from me. I think this is one of those pins that has circulated Pinterest many times and seems like a great idea, but it turns out to be a bit of a letdown. I didn’t follow any specific recipe, but this pin is similar to what I tried. I sliced the potatoes thinly, and used an entire stick of butter. I brushed the potatoes with olive oil and salted them generously. Then I baked them for almost an hour at 450° but they still didn’t cook quite evenly. The last ten minutes or so, I pulled them out and sprinkled parmesan cheese over the tops. The few pieces that were crispy and buttery and cheesy tasted good, but it was not worth the work, in my opinion. I’m not the biggest fan of baked potatoes, and these didn’t win me over.
